New York Times best-selling author and world-renowned chef, Marcus Samuelsson shows us how to whip up a meal that your guests will love in no time flat with ingredients that almost everyone already has in their kitchen. Plus, he shares his fun cocktail and simply syrup recipes!
Roasted Chicken:
2 breast
2 thighs
1 teaspoon of salt
Half teaspoon of back pepper
2 tablespoons of olive oil
1 table of fresh cilantro, chopped
1 teaspoon of ginger powder
1 teaspoon of coriander
Brush chicken with salt, pepper, oil and herbs. Place thighs in a pan on medium heat and roast for 6 minutes. Add in breast and keep roasting for 5 minutes before putting it in the oven. Turn the chicken. Put in the oven at 375 degrees for 12 minutes. Let it rest and serve with veggie rice and pickles.
Veggie rice:
2 cup of long grain rice
3 cups of water
1 teaspoon of salt
1 onion
1 clove of garlic
2 cups of cooked leftover veggies
1 cup of tomato sauce
1 lemon
Rinse rice for 5 minutes. Add 2 tablespoons of olive oil to a pan and throw in rice, garlic and onion. Toast for 5 minutes at medium heat. Add salt. Then add in water and tomato sauce. Let it simmer and cover pan with the lid. Then after 10 minutes, turn it off, let it sit for 5 more minutes. Finally, fold in veggies and squeeze lemon juice over contents.
Rooster Punch
Serving Size: 24
Ingredients:
1/2 cup of sugar
1/2 cup of water
1 piece of star anise
3 bottles of Cabernet Sauvignon
1/4 cup of pear brandy (ie: Poire William)
1/4 cup of Navan liqueur
1 cup mango puree
3/4 cup of blood orange juice
1 lime, juiced
1 lemon, juiced
Mix all ingredients together!
Apple Spiced Martini
2 ounces of SKYY Vodka
1/2 ounce of lime juice
1/2 ounce of Apple Spiced Simple Syrup (recipe to follow)
2 dashes of angostura bitters
Ice
Slices of apple (for garnish)
Mix all ingredients in a shaker. Add ice and shake. Strain through a Hawthorn shaker into a chilled coupe glass garnished with sliced apple.
Apple Spiced Simple Syrup
1 teaspoon of cinnamon, ground
1 teaspoon of ginger, ground
1 teaspoon of allspice, ground
1 teaspoon of nutmeg, ground (freshly ground if possible)
1 cup of granulated sugar
1 slice of red apple, 1/4 inch thick
1/2 cup water
Place all ingredients into a small saucepan. Bring to a boil. Strain into an airtight container. Refrigerate. Will stay fresh for up to 2 weeks.
